Live → Field-Dressed → Boneless Meat Yield
Typical published extension-service percentages. Actual yield varies with dressing method, aging, and cutting choices.
How this works
These percentages come from widely published extension-service estimates for deer and elk: field dressing (removing internal organs) typically leaves 75-85% of live weight, while final boneless, trimmed meat after butchering typically comes to somewhere around 45-60% of the original live weight, depending heavily on the animal's fat and muscle condition.
Why actual yield varies so much
Age, sex, season, and the individual animal's fat reserves all swing these percentages meaningfully — a lean late-season buck yields differently than a well-fed early-season doe. Dressing method (bone-in vs. boneless, how much fat and connective tissue gets trimmed) also changes the final number substantially; treat this as a planning estimate for freezer space and meat-cost calculations, not a guarantee.
Frequently asked questions
Why does my actual yield differ from this estimate?
These are typical extension-service percentages — actual yield varies with the animal's age, sex, season, fat reserves, and how much is trimmed during processing, so any individual animal can land meaningfully above or below the estimate.
Does field-dressed weight include the hide?
Field-dressed typically means internal organs removed but hide, head, and legs still on — check your local convention, since some hunters and processors define "field dressed" slightly differently.
Should I use this for elk too?
Yes — the species selector adjusts the typical percentage ranges for elk versus deer, since the two don't field-dress or yield boneless meat at exactly the same rates.
